About agriculture in Santiago Matatlán

Santiago Matatlán is situated in the Tlacolula District within the Central Valleys of Oaxaca, Mexico. The landscape is characterized by its semi-arid climate and rugged terrain, where the valley floor transitions into steep, cactus-dotted hillsides. The rural area is dominated by vast fields of blue-green agave plants, stretching across the landscape under the intense Oaxacan sun.

The region is internationally recognized as the "World Capital of Mezcal," making the cultivation of Agave angustifolia (Espadín) the primary agricultural activity. Beyond the massive agave plantations, local farmers often practice the traditional "milpa" system, growing maize, beans, and squash for local consumption. Small-scale livestock farming, particularly goats and cattle that can thrive in the dry environment, also supplements the local agricultural economy.

For agronomists and seasonal workers, the mezcal industry provides the most significant employment opportunities. Jobs range from the labor-intensive harvesting of agave hearts by "jimadores" to technical roles in the fermentation and distillation processes within local "palenques." Labor demand is relatively steady year-round due to the long growth cycle of agave, though the peak harvest often coincides with the dry season when transportation of the heavy agave hearts is most efficient.
